Millésime vintage sardines are caught at the end of summer, when they have reached their ideal size and optimal fat content. Processed while still perfectly fresh, they are preserved in high-quality olive oil. As they mature in the tin, their texture becomes more delicate and their flavour more intense. Over time, they develop a refined character, much like a fine wine. Even the bones soften to the point of being barely noticeable. A true delicacy.
