The tea can be enjoyed both hot and as a refreshing cold summer drink. Our field is at an altitude of 700 meters, near Elatochori in the prefecture of Pieria, with a view of Mount Olympus. It rains relatively often up there and the conditions are ideal. The harvest is in June and is done by hand without the use of machines. This ensures that the flowers remain intact. Drying is done – as in the past – without the use of technical equipment, using only the mountain air. This can take 6-7 days.A quick flashback: when we had a cold as children, we had to cover our heads with a towel and inhale the steam from the very hot tea pot. An old household remedy that we didn’t like at all back then – but: it helped!
